Description: Spencer Estabrook is a traveling chef with a passion for learning and applying new cooking techniques. With more than 17 years of professional experience, chef Spencer excels in a variety of cooking styles and regions that he can bring to the table wherever he goes.
Working seasonally in this industry affords Spencer the opportunity to continually seek out employment with chefs he admires in order to broaden his skill set. In addition to being a private chef, some career highlights include being the head chef of seafood restaurant Off The Hook, French baking at Eva’s Bakery & Boulangerie, southern heritage dining at Charleston’s Husk, and chef de cuisine at Michelin Star awarded restaurant Interstellar BBQ.
After working in the restaurant industry in leading roles, Spencer’s next venture is private cooking and teaching. Aboard the Lady Grace, chef Spencer enjoys the intimate setting to showcase his craft to provide delicious experiences for its guests.
When Spencer isn’t cooking or chatting enthusiastically about food - rare as this might be - he is known to enjoy travel, photography, fishing, reading and playing the harmonica. Together with his wife, he travels the country in his Airstream, sampling regional delights, visiting National Parks and finding unique experiences on the road.

Description: Jamie developed a love of the water by spending weekends on Lake Texoma with his father. Once he obtained his USCG Captains License, he started working on a wide range of vessels, always challenging himself to improve his abilities. This has provided him with the skills to easily traverse any itinerary that is thrown his way. Jamie has spent a good portion of his career in Alaska and Florida, while occasionally mixing it up in other states and even spent some time working in Panama on a Private Charter Yacht. He has always felt at home on the water and loves to share that with our guests. Jamie also has a love of flying in any form. He has his private pilot’s license, loves flying RC airplanes, and even occasionally will “captain” a drone to capture our amazing adventures on Lady Grace.

Description: Kelly has a varied background that focuses around travel, art, and taking care of others. She studied photography obtaining her BFA with her thesis focused on the tranquility of the Oregon Coast. She now seeks every opportunity to enjoy being on the water. That desire led her to the shores of Alaska, where she met our Captain Jamie, and they have been traveling together ever since. Kelly creates Lady Grace’s custom itineraries, making each guest the focus, and organizing it so each trip is one that our guests will never forget. She also serves as one of Lady Grace’s stewards when she is able. Kelly also has training in the medical field and provides a wonderful resource for guests in medical situations.
